This Flour is ground from our certified organic wheat fields using our stone mill. It is Wheat Flour milled from Soft Red Wheat which has good pastry baking qualities. It has a protein content of 9%. This flour is sifted and is finer and better for those finer pastry baking projects than the whole wheat flours. Nothing has been added so you get the full flavor of the Iowa grown organic wheat. This Wheat Flour is great for baking pastry or other favorite dishes. Sold in a 4 pound resealable bag. This is a whole grain flour. It contains all parts of the wheat (germ, endosperm, bran). It is sifted for consistency. It is best to store this flour in a cool, dry place to insure quality until the best buy date. If you store it in a refrigerator or freezer, it may extend (not guaranteed) its quality past the best buy date.
