This Flour is ground from our certified organic wheat fields. It is a of mixture of Hard Red Spring Wheat and Soft Red Wheat. It has a protein content of about 11 percent. Nothing has been added so you get the full flavor of the Iowa grown organic wheat. This Iowa general purpose wheat flour is great for baking and similar to the general purpose flour in the grocery stores except you can know the producer and the source of the wheat. Sold in a 4 pound resealable bag. This is a whole grain flour. It contains all parts of the wheat (germ, endosperm, bran). It is sifted for consistency. It is best to store this flour in a cool, dry place to insure quality until the best buy date. If you store it in a refrigerator or freezer, it may extend (not guaranteed) its quality past the best buy date.
